Isole e Olena is located in the hills near Barberino Val d’Elsa, in the heart of Tuscany’s Chianti Classico zone. Under the long stewardship of Paolo De Marchi, who took the reins in the mid-1970s, the estate became a benchmark for quality-driven Chianti Classico. The wine is fermented in stainless steel tanks with a 12-day maceration period, using both twice-daily pump-overs and the délestage (rack and return) technique — a method the estate pioneered for Chianti Classico beginning with trials in 1996 and full adoption from the 1997 vintage onward. This extraction approach sets Isole e Olena apart from producers relying solely on traditional pump-over methods, yielding softer tannins and deeper color without excessive phenolic harshness.
