Production & Heritage
Paqui Añejo is produced at the Autentica Tequilera distillery (NOM 1502) in Jalisco using traditional copper pot stills rather than the more industrially common column stills. The agave plants are harvested at more than seven years of maturity, with sugar content measured at 25–26 brix — an indicator of fully ripened, flavor-dense piñas. A distinctive step in the process is the use of fresh wine yeast in fermentation, chosen over the airborne yeast typical in tequila production to ensure consistency and minimize off-flavors. During distillation, the master distiller isolates only the heart of the distillate, cutting away heads and tails to remove harshness. The spirit then rests for fourteen months in ex-American whiskey barrels, which impart the warm vanilla and butterscotch character that defines the finished tequila.
