Domaine Gilles Morat is a family estate in the southern Mâconnais dedicated to site-specific Chardonnay. The Bélemnites cuvée takes its name from the belemnite fossils — calcified internal shells of extinct Jurassic-era cephalopods related to modern squid — that populate the vineyard’s clay-limestone subsoil. These ancient marine deposits shape both the drainage and mineral composition of the terroir. Fermentation and aging take place entirely in oak casks — 12% new, with the balance ranging from one to seven years old — over a period of twelve months.
