Azienda Agricola Ca’Vittoria farms in Conegliano, the northern Veneto zone at the heart of the historic Conegliano Valdobbiadene production area. The cuvée is composed of 95% Glera—the signature white grape of Prosecco—and 5% Raboso, a deeply colored, tannic red variety indigenous to the Veneto plains that has been cultivated in the region for centuries. Secondary fermentation takes place in pressurized tanks via the Charmat method, followed by three months of tank aging on the lees before disgorgement, preserving bright fruit aromatics while developing a fine, persistent mousse.
