Carmonis Collio Pinot Grigio is a 750ml, 13.5% ABV Pinot Grigio from the Collio DOC in Friuli-Venezia Giulia, Italy. Production & Heritage
Cantina Produttori Cormòns is a cooperative winery based in the town of Cormòns at the heart of the Collio DOC, a narrow band of hills running along the Slovenian border in northeast Italy. The vineyards sit on Ponca soil — stratified layers of Eocene-era marl and sandstone embedded with tiny marine fossils from what was once the sea floor — which imparts the distinctive minerality and salinity the appellation is known for. After harvest, grapes are destemmed and cold-macerated inside cooled pneumatic presses to gently extract antioxidant compounds from the skins. Fermentation occurs at controlled temperatures, after which the wine rests for six to seven months on its own lees in large oval-shaped oak barrels made from three different wood essences, building body and complexity rarely found in Pinot Grigio at this level.
